                  Food grade asparaginase for acrylamide reduction in baked foods


INTRODUCTION

Asparaginase specifically catalyzes the hydrolysis of amide bond of asparagine to product aspartic acid. During the processing of starch-rich food at high temperature acrylamide is usually produced. Acrylamide is thought to be a potential carcinogen. Asparaginase is able to degrade the precursor of acrylamide, asparagine, to prevent the formation of acrylamide, and thus greatly reduces the acrylamide level in final product.


Starch-rich food, etc., will undergo a Maillard reaction with asparagine during frying or baking at high temperature for long time, and this reaction will make foods brittle and show a unique color, smell, but it also produces a potential carcinogen, acrylamide (as shown in the figure below). Acrylamide has neurotoxicity, genotoxicity, and potential carcinogenicity, so it is important to control the content of acrylamide in food.


Asparaginase can reduce the content of asparagine in the raw material by converting it to aspartic acid, which undergoes a Maillard reaction instead. In this way, acrylamide will not be generated afterwards. So, the use of asparaginase can reduce the production of acrylamide in food, but it will not affect the appearance, taste and flavor of the product.

DOSAGE

For baking industry: The recommended dosage is 2-40g per ton of flour. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.


PACKAGE DAN STORAGE

Package: 25kgs/drum; 1,125kgs/drum.
Storage: Keep sealed in a dry and cool place and avoid direct sunlight.

Shelf life: 12 months in a dry and cool place.
