PRODUCT DESCRIPTION

This single enzyme product is produced by submerged fermentation of bacillus licheniformis  followed by purification and formulation. It’s of concentrate type and can effectively hydrolyze proteins within a broad range of temperature and pH. It’s used in food industry, medical treatment, detergent industry, vegetable and animal protein hydrolysate, chondroitin sulfate extraction, brewing, leather processing and other fields.

 

MECHANISM

Alcalase, which is a serine-type endo-peptidase, hydrolyzes protein to produce short peptides and amino acids.

 

APPLICATIONS

lThis protease can make meat hydrolysate to make flavors;

l Protein hydrolysate for functional foods

l Modification of the functionality of protein, such as viscosity, dispersibility, digestibility, etc.

l Improvement in yield and ease of processing for yeast extract: and;

l Collagen production from fish scale or fish skin;

l Phagostimulant production for pets and chondroitin sulfate extraction

l Medical cleaning to remove blood stains on equipment surface.

APPLICATION RECOMMENDATION

The recommended dosage is 0.01-0.5kg/t DS. The dosage has to be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
